Crack chicken is a staple in our house. It is super easy and quick to make. You actually only need one pan! And for the sake of full disclosure, there is no actual crack in Crack Chicken… 🤷🏼♀️😂
Start by cubing your chicken breasts. Melt butter into a large skillet (preferably the kind with sides). Place cubed chicken breasts in skillet and cook completely. Turn the heat to low keep the chicken warm.
Next, cut one block of cream cheese into six evenly sized cubes. put the cream cheese into the pan with the chicken. Turn the heat up to medium-high and begin melting the cream cheese.
Because I typically cook to taste, I’m guilty of not having exact measurements sometimes. This is one of those times. The only way I can tell you how to do this next step is to drown the chicken in cream. I’ve included a video that will hopefully give you an idea of what I mean.
Once you drown the chicken, turn the heat down to medium and stir. Bring the cream to a boil, continually stirring as not to burn it. Let the cream thicken up by boiling off some of the liquid for five to seven minutes. Turn the heat down and let it simmer. Once the mixture begins to thickly coat the spoon (kinda like old school Pepto Bismol), add two spoonfuls of sour cream and continue stirring for another 5 minutes.
Pour over rice, quinoa, pasta, biscuits, or if you are on carnivore/keto, like me, eat it as it is!
